Sicilian Cassata Cake

This is my favorite Sicilian desserts to have especially for Easter. Cassata cake is a sponge cake, softened with fruit juices and or liquors, and filled with ricotta cheese and chocolate chips or candied fruits, with a delicious outside layer of marzipan. Most of the bigger cakes are decorated with frostings and fruits for design, but the smaller versions of this cake has everything but the decretive frosting and just has candied fruits on top with the marzipan.

I've never had other styles of this cake before because this one was always accessible to me. Other ways Italians can make this cake is with the same concept of the Sicilian version but without the marzipan outer layer.
