Risotto Tartufato Piemontese

In the northwest region of Italy, Piedmont is famous for their rice fields. Risotto is their favorite dish to have because of how accessible it is to them. This risotto is made with cheese, rice, and truffles (tartufo bianco d'Alba) which is one of the MOST expensive truffles in the world.

This dish looks absolutely delicious, I've had many variations of risotto but never had this one before. This is going on my bucket list for different foods to try while studying in Florence next year.
