Handmade ravioli in Capri has to be one of the best ways to have it and to make it. Capri is on the coast off the coast of Italy near Naples.
The fresh dough is made with flour, butter, and boiling water with the texture of a dumpling. It's made by hand because the dough is too thin for a pasta machine. The dough is rolled paper thin but without holes, then the filling is placed on top spaced out, then the dough is placed on top. After the dough is placed on top of the filling and dough it is cut into circles with a stamper.
The thin layer of dough is then layered over the filling mixture which contains; egg yolks, caciotta cheese which is like Monterey Jack cheese, buffalo mozzarella, and marjoram.
The sauce with the dough consists of fresh tomatoes, olive oil, and garlic, with Parmesan and marjoram sprinkled on top.
This dish sounds absolutely amazing, I've had handmade pasta before but it was just made with egg yolks and flour. It makes a world of a difference from handmade pasta and boxed pasta. I will definitely have to put this on my bucket list, so for now based on how appealing it is, I'm going to give this dish a 5/5 meatballs.
